    　　中新网山西吕梁12月21日电 题：山西柳林：腐竹加工“小产业” 开启乡村特色振兴路 　　作者 刘小红 呼一鸣 张璐璐 　　在山西柳林县穆村镇安沟村，一家深挖乡土资源的腐竹加工厂，构建起成熟稳定的生产运营体系，带动村民就业增收、推动乡村经济多元化发展，是当地乡村振兴的重要力量。 　　21日，记者走进腐竹加工厂的生产车间，豆香弥漫，煮浆、挑皮、晾晒等工序有条不紊地进行着。工人们手法熟练，各司其职，一派热火朝天的生产景象。精选黄豆经清洗去杂、清水浸泡至饱满后，被研磨成细腻豆浆，熬煮静置后凝结出豆膜。 　　工人们凭借经验轻轻挑起豆膜，逐片挂在晾晒架上，反复挑皮塑形，再送至盐卤区调味定型，使腐竹口感紧实醇厚。最后，将成型的腐竹移至通风处烘晒，待水分蒸发至适宜程度，色泽金黄、质地柔韧的腐竹便制作完成。整个过程坚守手工匠心，保留地道风味。 腐竹加工厂的生产车间内，豆香弥漫。柳林县融媒体中心供图 　　生产线职工贾金连在该厂工作4年，她告诉记者：“这里工资将近7000元，既能照顾家里，又能照料老人，这是我们家门口的好厂子。” 　　多年来，该工厂聚焦本地就业需求，主动吸纳周边村庄100余人稳定就业，让乡亲们不用背井离乡，在家门口实现“挣钱顾家两不误”。 　　工厂相关负责人李章山表示，品质是立身之本，每一批黄豆都要仔细筛选，浸泡、磨浆、熬煮、揭皮等每一步都不能疏忽，烘干、杀菌环节更是严格把控，既要留住传统味道，更要让大家吃得放心。 　　凭借严苛品质管控、地道传统风味与稳定产能供给，该工厂所产出的腐竹产品广受市场欢迎，远销各地。目前，年产腐竹达5000吨，年销量稳步突破6000万元，让柳林穆村的腐竹香飘四方，成为带动村民致富的“金钥匙”。 　　接下来，腐竹加工厂将持续深耕腐竹品质，借力政策支持推进生产智能化升级，同时挖掘腐竹背后的乡土文化，让小产业兼具经济价值与文化温度，为乡村全面振兴注入持续动力。 　　一颗小黄豆变身香腐竹，一个小产业托起振兴梦。腐竹加工厂以乡土特色产业为纽带，串联起品质坚守、民生保障与乡村发展，既守住了传统风味里的烟火气，又激活了乡村振兴的新动能，让村民的日子越过越红火。(完) 【编辑:胡寒笑】|dfg|
